The "Bénichon" ( swiss traditional celebration) mustard is a typical speciality from Fribourg's township. It's a king of spicy jam, bittersweet, aromatized with cinnamon, star anise etc.
It is eaten with "cuchaule"( kind of brioche perfumed with saffron).
It exists a lot of differents recipes of this mustards: ours is made by Mme Lisbeth Sciboz ( which is coming from her grandmother).
