Smoked Scarmorze

This unique Italian origin cheese is made, like its cousin the Mozzarella, with cow milk and its paste is mastic ( means it is knead and stretched until it takes the good consistency).
It will be then refine during 2 to 3 weeks. Then smoked.
This making gives to the Scarmoze a subbte nutty taste.
As Mozzarella, savor it in salad, grated or cook as you like.
